The Ultimate Islands Marshmallow

65g Egg White
7 Sheets Gelatine (+100ml Water)
350g Caster Sugar
1 Tbsp Glucose Syrup
150ml Water

Grease and line a 20cm X 20cm tin. Dust a thin layer of icing sugar on all surfaces and set aside until needed.
Soften the gelatine in the 100ml of water. Once softened remove from the water and squeeze out any excess water from the gelatine.
In a pan, combine the sugar, glucose syrup and water and heat gently to dissolve the sugar. Start whisking up the egg white to medium peak. Increase the heat on the pan and cook the sugar syrup to 116c.
Once the sugar has reached temperature, remove from the heat and allow to settle for a few moments. Add the gelatine and swill around to dissolve. Pour this mixture slowly down the side of the mixing bowl with egg white (being careful not to splash the mixture on the sides of the bowl.)
Whip up until the mixture has become thick, light, and fluffy and has also begun to cool (this will take 5-10 minutes).
Pour the mixture into your preparing tin and level smooth. Dust a layer of icing sugar over the top and leave to set for a few hours.
When ready, use a hot knife to cut into portions and top with your favourite cup of (Islands) hot chocolate.
