Chocolate Salami
Chocolate salami may sound a little strange, but there’s no deli platter in sight, we promise. Smooth, rich chocolate marries beautifully with the crunchy bites of biscuit crumbled throughout to create the perfect sweet snack.

• 250g Islands 75% Chocolate
• 100g Unsalted Butter
• 150g Caster Sugar
• 3 Eggs
• 2 Tbsp Cocoa Powder
• 250g Digestive Biscuits
• 75g Banana Chips
• 75g Pistachio
• 50g Pecans
• 1 Tbsp Icing Sugar -
• Melt the chocolate over a Bain Marie, set aside to cool.
• In a food processor blitz the nuts and banana chips until coarse chunks (you can use any nuts or dried fruit — it’s entirely up to personal preference).
• Place the biscuits in a freezer bag and hit with a rolling pin until a coarse crumb. Combine your nuts and biscuits together and set aside until needed.
• In a mixing bowl, mix the butter and sugar together until light and fluffy. Gradually add the eggs and mix to combine. Mix in the cocoa powder followed by the melted and cooled chocolate.
• Add the nut biscuit mixture and mix until the fully combined. Cover your counter with a few layers of clingfilm, decant your mixture on top and spread over evenly. Using the cling film roll into a sausage shape and chill in the fridge until firm.
• Once set, roll in icing sugar and slice to serve. Slices of this salami also makes great gifts!
