Sourcing the finest flavour cocoa directly from our partner farms in the Dominican Republic, we have been able to create our own cocoa butter. We have left this unrefined, naturally un-deodorised unlike the majority of cocoa butter on the market.


Mass-market cocoa is riddled with mould and contaminants, resulting in an off-cheesy tasting cocoa butter which has to be treated with a deodorising process to remove any trace of odour or flavour. Because our cocoa is of the highest quality, the natural flavour of our cocoa butter is utterly delicious and has already added a further depth of flavour to our milk and dark couvertures.


Due to the quality of this cocoa butter, we have been able to craft a truly unique, complex white chocolate with subtle chocolate flavours and a well-rounded cocoa sweetness. It has a sophisticated, refined flavour without the cheap, sugary flavour associated with the majority of white chocolates on the market.


The chocolate buttons are in a larger Baker Button size, still a couverture appropriate for melting and using to recipes, but offering a chunkier texture for bakes where required.
