Dark Chocolate and Avocado Truffles
Every now and then we get the urge to try out our delicious Islands Chocolate in different forms. This is why we decided to make this chocolate and avocado truffle which is just what you need for a simple, but elegant treat. A small, guilt-free pleasure made of no more than six ingredients. Not to mention that it is dairy- and gluten-free!
We found that the 72% Islands Chocolate bar is just perfect for this recipe as it gives the truffles the right amount of bitterness, but feel free to experiment with our other percentage bars as well.
200 grams of 72% Islands Chocolate
1 small ripe avocado
1 tbsp of honey
1/2 tsp vanilla extract
pinch of salt
Take your 72% Islands Chocolate and melt it in a heatproof bowl or pan above some simmering water. Don’t allow the water to boil, keep it simmering throughout the process.
Add the vanilla extract, honey and salt to the chocolate and stir them together. Set the mixture aside to cool a bit.
In the meantime, get the avocado flesh out of its shell and smash it with a fork until it is completely smooth. If you have a food processor, use that.
Mix the chocolate mixture with the avocado until it is smooth. (either with the food processor or with a fork)
Put the mixture in the fridge for 20 minutes.
Now, form little balls of the mixture (use a teaspoon for measurement) and roll them in the desicated coconut.
Enjoy your little creations at room temperature and if there is any left, store them in the fridge!
