TEASING CHOCOLATE TRUFFLES - GRETA BOCCIA

Ingredients:


300g 75% Islands Chocolate⁠
150g Butter⁠
150g Cream⁠
30g armagnac (can be substituted for another liquor or choice)⁠
30g cold milk⁠

    Method:


    ⁠Warm the butter + cream⁠
    Add the armagnac & emulsify with a hand blender
    Add cold milk to give a smoother finish⁠
    Leave to set in the fridge ⁠
    Scoop & roll into balls⁠
    Chill the balls in the freezer for 5 minutes⁠
    Melt chocolate and dip rolled truffles in one by one ⁠
    Leave to set then roll in your hands till smooth⁠
    Coat each ball in cocoa powder⁠
