TRIPLE LAYER COOKIE-STUFFED BLONDIE-BROWNIES - ELI BRECHER

Can't choose what to make? Try these to have it all - Cookies, Brownies, AND Blondies. 
Ingredients: 

BLONDIE LAYER:⁠⁠
1/2 cup nut butter⁠⁠
 3/4 cup coconut sugar⁠ 
 1 egg (or flax egg for vegan)⁠⁠
 2 tsp vanilla extract⁠⁠
1+1/4 cups oat flour (or any flour)⁠⁠
1 tsp baking soda⁠⁠
 1/2 tsp sea salt⁠⁠
1/3 cup dark choc chips @islandschocolate⁠⁠
16 cookies⁠ @gatoandco⁠⁠
⁠⁠
BROWNIE LAYER:⁠⁠

A Brownie mix of your choice (cheating but makes life a lot easier)
You can also make twice as much of the blondie mixture, divide in half and add in 1/4 cup cacao/cocoa powder + splash of milk for the brownie layer. 

Method:

 Preheat oven to 180C and lone a square brownie tin with greaseproof paper. ⁠⁠
Start by making the blondie layer - mix the nut butter and sugar until combined, then stir in all other ingredients.⁠⁠
 Pour batter into the lined tin and place the cookies in one even layer on top. ⁠⁠
Make the brownies, spread this over the cookies and sprinkle with optional chocolate chips!⁠⁠
Bake for 20-25 mins, then allow to cool for at least one hour before slicing.⁠⁠
